Cotignac’s Trois Marches – A Fall Evening for Pizza

Welcome to Tres Marches

The petite chalkboard advertises the Salade Italienne with a gourmand coffee or dessert for 14 euros. It is very tempting. However, it is Pizza night in Provence and a favorite spot for us is Cotignac’s Trois Marches in the heart of our village. The calendar says it is autumn and the cool night air suggests that a red wine should be ordered.

We spy one of our favorite local red wines from the Chateau Carpe Diem on the wine list. Carpe Diem is under new ownership and their marketing efforts at the weekly Cotignac market have paid off. Sampling wine during the year round weekly market has been a pleasure and a lot of fun. The red Cotes de Provence 2012 bottling proves to be a natural advertisement for the vineyard’s terroir. It is smooth and easy to drink without a prolonged decanting.

The Carpe Diem is perfect with our savory pizza. The pink and green chalked menu blackboard ( shades of Lilly Pulitzer ) lists pizza names like Monique, Gaspard and Lucciano. We each order a Nicolette with jambon(ham) and mushrooms. Mr. B is a fan of the lightweight, flaky hand tossed crust. There are never any leftovers for a future lunch!
